Nutella Swirls

I made these by accident the other day, and what a happy accident they were..!

I was making some biscuits for another birthday party. This time I was brave (see my “Enough?” post if you’re not sure what on earth I’m on about), and just gave the biscuits-still not sure how well received they were…

I made a whole batch of dough, and only used a bit for the 6 biscuits, so had lots leftover to make biscuits for us-happy coincidence..?!

I used my new favourite cut out biscuit recipe, from this book Biscuit, by Miranda Gore Browne, of Bake Off fame:

The basic biscuit recipe is called Imagination Biscuits. I’ve added the nutella swirl element…!

This is what you need:

  • 200g softened butter
  • 200g caster cugar
  • 1/2 tsp vanilla extract (you can also add grated lemon or orange zest)
  • 1 medium free range egg
  • 375g plain flour (or if you want to make a chocolate version, use 350g plain flour, and 25g cocoa)
  • Nutella (other chocolate spreads are available..!)

This is what you do:

  • Cream the butter and sugar with the vanilla extract
  • Add the egg and mix well-you may need to scrape down the sides to get the butter/sugar mix to incorporate
  • Mix in the flour on low speed until it forms a dough, and then bring it together with your hands
  • Knead briefly, and then shape into a disc shape, before placing in a sandwich bag (I use a sandwich bag, as it’s more re-usable than wrapping in clingfilm!), and place the dough in the freezer for at least 30mins
  • Pre-heat the oven to 180C, and line 2 baking trays with re-usable silicone liners
  • Roll out the dough on a well floured surface to about 3-5mm, into as rectangular a shape as you can manage
  • Put 3-4 large tbsps nutella into a bowl, and microwave on high for about 10 seconds to soften it slightly and make it more spreadable
  • Spread the nutella all over the biscuit dough, and then roll up in to a spiral from one of the long sides

  • Cut the sausage into discs, about 1-15cm wide, and place each disc on the baking tray

  • I then squished each disc down a bit with the palm of my hand. Not sure why, but it seemed to make them more aesthetically pleasing…

  • Bake in the pre-heated oven for 8-10 minutes until golden brown
  • Allow to cool for 10 minutes before transferring to a cooling rack to cool completely

  • Feed to your happy kids (but make sure you save some for yourself)
