It’s that time of year.
In case you hadn’t noticed, Halloween is on it’s way.
We are not big into Halloween, and I am resisting Trick or Treating for as long as I possibly can. BUT we have got quite into pumpkin carving in the last couple of years.
We are not great-I get the kids to draw a face onto their pumpkin, and then hack away ineffectually until some kind of semblance of a face is carved.

Needless to say, this isn’t one of our attempts….

After hollowing out the pumpkin, there is obviously the small matter of what to do with it, so that it’s not wasted.

I love Pumpkin ice-cream (vegan friendly of course) which is made using coconut milk, brown sugar, pureed pumpkin and some spices like cinnamon and nutmeg (optional) YUM!
